This website provides an introduction to recent research on fluids and granular materials.  A video, entitled "Leaping Shampoo," shows shampoo being poured onto a surface where the fluid piles in heap and then unexpectedly forms a jet outward.  This site also describes and illustrates studies of clustering in vibrated granular materials.
