See this site from Harvard University for an introduction to Schlieren optics, which allow scientists to observe changes in the path traveled by light.  The site provides an explanation of how such systems are setup and how they work to detect changes in the index of refraction of air.  Numerous pictures are also available to show the equipment setup procedure.
