You can combine Tracker video data with sensor data in the Data Tool. To open Data Tool, choose the Window|Data Tool... menu in Tracker.
You can send Tracker data directly to the Data Tool by right-clicking any Tracker plot or table and choosing Analyze... from the popup menu.
You can import data into the Data Tool (e.g. from your temp sensor) either by cutting/pasting from another application or by saving the sensor data in a text file and then choosing the File|Import Data... item in Data Tool.
